What makes rye malt whiskey different?

Traditionally, the malting process has been reserved for barley. But malting is critical for converting the natural starches found in these grains into fermentable sugars. To get around this, rye distillers use external enzymes during the mashing process to force starch conversion, instead of just augmenting it.
